Endorsement from the Jamie Oliver empire is helping Kelowna baker Nicole Knegt spread her gluten-free prowess.
Knegt, of Four Spoons Bakery, sent Oliver’s production company a huge piece of cardboard toast as a gimmick to get on Oliver’s YouTube channel, Jamie’s Food Tube, and tell the world that gluten-free baking doesn’t have to taste like cardboard.
It worked.
Oliver’s team has uploaded a video of Knegt adapting the celebrity chef’s cream puff recipe from his latest cookbook, Comfort Food, for the gluten-free crowd.
In the process, the team also proclaimed Knegt “Canadian queen of gluten-free baking.”
Foodies can now go to Jamie’s Food Tube and check out videos under Fresh Talent Playlist and vote for their favourites.
Winners will get to work with Oliver’s network on an ongoing basis.
“Please watch the video and give us the thumbs up,” said Knegt.
“We feel there is a niche for a food channel that caters to those of us who live with allergies, celiac disease and other food sensitivities.”

Mission Hill Winery has added five more cooking classes to its winter roster to keep up with demand.
The original seven classes sold out quickly, so the West Kelowna winery has added two Celebrate France sessions on Jan. 29 and 30, India on Feb. 4, Celebrate California on Feb. 17 and Thai on Feb. 19.
All run 6-8:30 p.m. and are held in the culinary theatre at the winery.
